The legend says that is not by coincidence that Chalabal Estrella produces outstanding coffee. Oral tradition grants this blessing to the “Saints of Chalabal Estrella”, two mystic rocks that you can see when taking the road that crosses the beneficio to the nearby towns. One thing is certain, its rich volcanic soils with abundant organic material due to shade grown coffee and the high altitude of the mountains surrounding the farm, are the perfect combination to naturally produce excellent coffee.
Almost 40% of the farm is a natural reserve that protects water resources providing half of the water for consumption of communities living near the farm, clean water to milling coffee and to feeding Xayá Pixcayá river. It has bee hives, worm compost (coqueta roja) for organic fertilizer, production of green beans and avocados.
